Prepare white cake as directed. Let cool. Cut into two layers.
Poke holes in cake with a toothpick. Brush pineapple juice on top of cake, ensuring it soaks into the holes.
Bring dried pineapple, pineapple juice, cream of coconut, and water to a simmer. Cook until pineapple is softened and liquid is reduced to a syrup (20 minutes). Mash with a potato masher, until it resembles jam.
Beat butter and salt until light and fluffy. Add in icing sugar until smooth. Add in cream of coconut and beat on high until thick.
Fill white cake with pineapple mixture. Cover entire cake with frosting. Top with coconut flakes and dried pineapple.
