Great cool cheesecake
1. Crush biscuits finely and combine with melted
butter.
2. Mix well and press over base and sides of
an 8" (20cm) sponge tin.
3. Refrigerate until set firm.
4. Soften gelatine in cold water then heat to dissolve
it. Leave to cool.
5.Beat cream cheese until soft and smooth. Add
condensed milk and beat well.
6. Add drained pineapple, lemon juice, lemon rind and cooled
gelatine mixture.
7. Stir thoroughly then spoon into prepared crumb
base.
8. Refrigerate until firm and decorate with
whipped cream.
Malt biscuits go well for the base - adding cocolate chips to the base is good but they need to be finely broken up
