Most plantain chip recipes ask for the plantains to be deep fried. Great tasting, but not the healthiest for you. To get that same crispiness without the frying, this recipe tosses them with olive oil spray and then bakes them off in the oven.
Preheat the oven to 350 deg F. Slice off ends of plantains; make several vertical slits in plantains just cutting through the surface of the skin and place in large bowl. Cover with warm water and let sit in warm water for 10 minutes to loosen skins. After soaking, peel off skins and slice thinly.
Lightly spray a baking sheet with olive oil spray. Separate plantain slices and spread out onto baking sheet in one single layer. Lightly spray the tops of plantain slices with olive oil spray. Bake in oven for 10 minutes, or until golden and crispy.
Remove from oven and sprinkle with salt, to taste, while still hot.
