Roasted pork loin, or shoulder blade
Mix spices and brown sugar in a bowl
Rub roast with olive oil, salt, pepper, garlic
Brown meat in roasting pan with olive oil at med/high heat
Remove roast from the pan, rub and season with spice mix and return to pan
Add broth, cover roast with sliced onions, chopped garlic and chopped celery (add more liquid if needed at cooking time)
Roast in the oven at 400o (1/2 hour per pound uncovered (last 45 min cook covered) bring roast to 145o, remove and rest for 30 min
