Great tasting pork loin tacos with a slight variation on your typical taco toppings.
Pre-heat the oven to 425 degrees.
Start by making a rub for the pork loin. In a baking dish, mix together the following spices:
1 tsp Sea Salt
1/2 tsp Ground Pepper
1 1/2 Hungarian Paprika
Rub the pork loin with the mixed spices. Place the rubbed pork loin on a grill/rack over the baking dish. Place a 1/2 cup of water into the baking dish. Bake for 30 minutes. Cover the cooked pork loin in foil for 10-15 prior to slicing it up to use in the tacos.
Mix up the above ingredients into a bowl. Season with sea salt and white pepper until desirable taste is reached. Cook the torillas and serve.
For more flavors, you can also add sour cream and jalepenos.
