Simple but elegant
Rub pork tenderloin with olive oil and salt and pepper to taste and grill for an internal temperature
of approximately 155 degrees. Can be baked in the oven if a grill is not available.
Meanwhile in a small pot add onion slices and 1 cup of beef stock and reduce by half. Next,
add 1 cup of red wine and reduce by half. Strain to remove the onion.
Wisk in the Grey Poupon and thicken the sauce with a mixture of corn starch and water.
Add the fresh Tarragon and simmer another couple of minutes.
Slice the pork and drizzle the sauce over it.
Can be servesd with Rissoto with onion and bell pepper or steamed red potatoes
with a vegetable.
