Combine chicken, water chestnuts, onion, soy sauce, sherry, cornstarch, & ginger. Mix well.
Brush edges of wonton wrappers with water. Spoon 2 teaspoons of filling into center of each. Fold over and seal. Pinch edges into tiny pleats. Keep filled dumplings covered to prevent drying.
Heat 2 flat bottomed skillets until very hot. Add 2 tablespoons oil to each. Place dumplings in skillet in a single layer. Cover and cook over low heat for 5 minutes or until browned. Add 1/3 cup water. Cover and cook 5 minutes or until liquid has evaporated.
