Roll out pastry to fit 9x13 pan.
Cook onions in oil 8-10 min until softened and just beginning to carmelize. Stir in garlic and two thirds of thyme and cook for a further 2 minutes. Scatter onions over base of pastry
Par-boil the postatoes in boiling salted water for 4-5 minutes. Drain well and arrange over onion mixture.
Beat together the eggs, creme fraiche and wholegrain mustard. Season well with salt and pepper
and pour over onions. Scatter rest of the thyme and bake for 20 minutes until the filling has set and is golden colour.
