Sweet potatoes
Preheat oven to 350 degrees.
Pierce each potato several times and place in baking dish. Bake until tender, 1 1/4 to 1 1/2 hours. Set aside until cool enough to handle.
In saucepan, heat milk and butter until butter has melted and mixture is hot but not boiling. Cut potatoes in half and scoop flesh into large bowl, discarding skins. Use potato masher, ricer or food mill to mash potatoes. Stir milk mixture into potatoes. Whisk in eggs until well-combined. Add brown sugar and stir until blended.
Butter 9x13 inch baking pan, or 11-inch round oven-to-table caserole dish. Spread sweet potato mixture evenly in baking dish. Set aside while making topping. Increase oven temperature to 375 degrees.
Topping:
Melt butter in 2-qt. saucepan over low heat. Stir in brown sugar, salt, cinnamon, nutmeg, cream and pecans. Heat to simmer and cook, stirring constantly, until sugar has dissolved and mixture is thick, about 5 minutes. If mixture begins to boil and splatter, turn down heat to maintain simmer. Remove from heat and stir in vanilla. Pour topping evenly over sweet potatoes, spreading it with rubber spatula.
Bake casserole until topping is slightly crusty and set, about 30 minutes. Serve immediately.
Make-ahead tip:
Sweet potato mixture and topping can be prepared a day ahead and refrigerated, then assembled before baking.
