If necessary, cut roast to fit into slow cooker.
Rub meat with salt & pepper.
In a large skillet, add 1 T. cooking oil.
Brown meat on all sides; drain.
Transfer meat to a 3 1/4-5 qt. crock pot.
Add onions, root beer and garlic.
Cover & cook on low for 8-10 hrs or high for 4-5 hrs.
After cook time, transfer roast to a cutting board or serving platter.
Using two forks, pull meat apart into shreds.
Remove onions from pot and discard juices.
Serve on buns with cooked onions, BBQ sauce and cole slaw, if preferred.
Serve with regular or sweet potato fries.
