Mac'n'cheese made with quinoa and three cheeses!
1. Prepare quinoa according to package directions, using beef stock as cooking liquid (add water if needed to equal specified amount), until cooked and spiraled out.
2. Preheat oven to 350 degrees. Spray an 8x8 inch baking dish with non-stick spray.
3. In a large bowl, mix together eggs and Greek yogurt until well blended. Add most of the sharp cheddar cheese, all the mozzarella and all of the Gouda. Add the garlic powder, onion powder, seasoning salt, Worcestershire sauce, and Tobasco. Mix until blended together.
4. Drain any excess cooking liquid from quinoa, if necessary. Add quinoa and butter to cheese mixture and stir until mixed well. Put in prepared dish. Top with remaining cheddar cheese and breadcrumbs.
5. Bake for 30-35 minutes, until mixture is bubbling and breadcrumbs are browned.
