1) Stir together: 1/2 cup oil, 1 cup sugar, 2 eggs, 1/2 teaspoon vanilla.
2) stir in: 3/4 cup flour, 1/3 cup unsweetened cocoa, 1/8 teaspoon salt, and 1/4 teaspoon baking powder
3) Coat 32 mini muffin cups with baking spray (don't use little muffin papers); spoon in 1 teaspoon brownie batter into each.
4) stir together only enough to achieve a swirled effect: 2 oz. cream cheese, 2 teaspooons milk, 2 tablespoons red raspberry preserves.
5) spoon a generous 1/4 teaspoon cheese mixture in center of each cup. then cover with 1 teaspoon brownie batter.
6) bake at 325 degrees for 13-15 minutes until top surface is puffed and slightly cracked, and almost firm to the touch. cool before removing from pans.
