Light take on turkey and pasta
Cook pasta according to package directions and drain well.
Saute shallots in oil in large saute pan over medium heat. Add turkey sausage (remove from casing) and continue cooking until browned, about 5 minutes. Add leeks and saute until softened. Add mustard, chicken stock, and cream and simmer 10 minutes. Add pasta to turkey sausage mixture and toss well. Sprinkle with cheese blend and chives. Serve
