Suggest a better descriptionLightly rub whole red peppers with some extra virgin oil and roast in oven, over medium grill (or at least 6 inches from flame) or over gray burner, turning till all charred and tender. Put in brown paper bag at least 20 min.
Rub gently (be carful not to burn yourself) and peel off skin. Cut according to your preference. Set in non-reactive bowl or container.
Chop some garlic and throw into bowl on top of peppers. Add a little salt, plenty of freshly ground pepper, any spice or herbs or your choice.
Pour in just enough good quality balsamic vinegar to barely cover peppers. Mix gently and let marinade at least 1/2 hour. Before serving , add a little extra virgin oil and gently toss through. Adjust seasoning if necessary.
