A mellow beef and chicken recipe which can produce a lot of meat for combination with rice and other foods. The flavor is mild, with a little spice and tang.
Cut the roast and chicken breast into strips. Brown in frying pan and set aside.
Squeeze lime juice into a bowl. Mix herbs de Provence, salt, ground pepper, la Kama and mix. Chop up lime rinds and set aside
Place browned meat into a tangine. Layer in apples and raisins , sprinkling each layer with lime rinds and coating each layer with combined la-Kama/lime juice mix. Sprinkle Rasel al Hanout on top layer. Cover and cook at 450 degrees for 1 hour and 45 minutes.
