Suggest a better description1. Prepare Ingredients - preheat oven to 400 degrees F. Cut paneer into 1-inch cubes. Peel onion and mince. Trim and discard skin of ginger and mince. Mince garlic. Rinse spinach and finely chop.
2. Cook onion - heat 1 tablespoon vegetable oil in a large pan over medium-high heat. When oil is shimmering, add onion, ginger and half of garlic. Reduce heat to medium, add 1 tablespoon water, and cook until onion is soft and golden, about 10 minutes. Add spice mix and cook until fragrant, 3-5 minutes more.
3. Cook Paneer - while onion cooks, heat 1 teaspoon vegetable oil in a large nonstick pan over medium heat. When oil is shimmering, add paneer, cayenne pepper, and turmeric and stir to coat. Cook until paneer is golden brown all over, turning, about 5 minutes total. Remove pan from heat and set aside.
4. Bake Naan - while paneer cooks, sprinkle naan with remaining garlic and drizzle 1 tablespoon oil oil. Place on a baking sheet and bake until garlic is golden and naans are crisp, 6-8 minutes.
5. Cook Spinach - when onion is soft, add spinach and 1/4 cup water. Reduce heat to medium low and cook until spinach is wilted, about 8 minutes. Add greek yogurt and paneer and stir to combine. Heat until yogurt is warmed through, about 1 minute. Taste and add salt as needed.
6. Plate Saag Paneer - divide saag paneer evenly between 2 plates. Serve with naan alongside for dipping.
