Nothing beats a classic, but sometimes a new twist opens up a world of new flavors. We did a little "miso magic" with these Swedish-inspired salisbury steaks, and if you're a fan of food that tastes like getting a big hug, then this one needs to go into your weekly meal rotation. It's spicy and savory, with tons of warming spices and just a little peppery kick.
1. In a large bowl, grate the onions. Stir in the mustard and breadcrumbs, incorporating into the onions and juices. Let sit for 10 minutes.
2. Add ground beef, egg, and spices and stir to combine.
3. Scoop 3-4 tablespoons of the mix and form into tightly packed ½-inch patties the size of your palm. The mixture should yield 8-10 patties.
4. Heat the butter in a pan on medium heat. Working with no more than five patties at a time, dredge each patty in the flour to coat and place in pan to brown for 2-3 minutes on each side.
5. Dredge the patties in flour to coat. (The patties should be well-browned to hold firm in the gravy. It’s okay if the inside temperature is medium-rare as it will finish cooking in the gravy.) Set the patties aside.
6. In the same pan used for the patties, heat the butter on medium-low until melted. Stir in 2 tbsp of the flour used to dredge, then stir in the miso and mustard. Add the garlic and lightly sauté for 30 seconds until fragrant.
7. Add 2 tbsp of broth to the pan with the instant coffee and mix to form a roux, scraping the bottom of the pan to fully incorporate.
8. Add the remaining broth slowly, along with the mushrooms, and simmer for 5-6 minutes.
9. Return patties to the pan and cook over medium-low heat for 15-20 minutes, or until steaks are tender and cooked through.
10. Serve warm and enjoy!
*You may not need all the broth, so only add about half to start, then more as needed for extra gravy.
