Salmong Burgers from OSPMAG | Summer 2012
Place the salmon, red pepper and red onions in medium size bowl.
Mix mayonnaise, mustard, lemon zest, lemon juice and cayenne pepper in a small bowl; whisk together.
Add 1/2 of the mayonnaise mixture to the slamon mixure and stir in 2 tablespoons of breadcrums salt and pepper. Add enough of remaining mayonnaise mixture to coat the slamon, shape mixture into patties, andplace in refrigerator for at lest 30 minutes so they will hold their shape.
Coat a non-stick fry pan with oil and heat on medium. Dredge salmon patties in breadcrumbs. Cook for 4 minutes, turn and cook an additional 3 mintues. Serve on bun with Cajun style mayonnaise and arrrugul a (or garlic and tarragon aioli).
