Salsa Verde
Bring water to a boil in a saucepan. Add tomatillos, garlic cloves, chili peppers and onion. Cook over medium heat for 20 minutes, then remove from heat. Drain and reserve cooking water. Cool.
Put tomatillo mixture in blender. Add cilantro; blend until smooth. Add salt to taste. If necessary, add cooking water in increments of one tablespoon to achieve a slightly thick consistency. For best results, prepare one day before and refrigerate until one hour before serving. Garnish with cilantro and onion, as desired.
