A nice side for Thanksgiving.
A dirty little secret leftover is to place a spoonful of this into very hot milk and it tastes almost like oyster stew.
Heat oven too 350 degrees.
Butter a 9 by 5 baking dish
Drain oysters and save their liquid
Place a thin layer of saltines in base of casserole
Drizzle 3 Tablespoons of oyster liquor over the crumbs
Cover with half the oysters.
Season as desired
Cover with about a third cup of crackers and pour over half the butter
Add a second layer of oysters, season and top with remaining crumbs
Whisk together egg and milk and pour over the top
Drizzle rest of butter over top
Bake until oysters are firm and edges of dish are golden brown.......about 30 minutes
Cool slightly before serving
Oysters are sensitive to over cooking!
