Spinach is added just before serving.
Serving size is 1/2 cup per person
Directions:
1. Crack 3 eggs at a time into a small container to ensure eggs are not spoiled and prevent shells from falling in. Then eggs can be placed into a bigger container to be whisked 10 eggs at a time.
2. Wash the spinach (if needed) then trim - use white cutting board.
3. Whisk in milk.
4. Coat pan/grill with butter, poor in egg mixture and add salt and pepper to taste. When almost set add cheese. Cook eggs thru. Taste and make sure it has enough seasoning, add if necessary.
5. Add tomatoes. Gently stir to combine. Transfer to serving container, keeping in mind eggs will continue to cook in the warmer.
6. Place container in warmer until ready to serve. Just before serving, add spinach and gently stir to combine. (Spinach will turn the eggs green if allowed to sit for a length of time.
