Soak gelatin in 1/2 cup of water. Boil cinnamon for 15 minutes in 1 cup of water. Pour boiling mixture over soaked gelatin. Add rind of one lemon and juice of 2 lemons, sherry, sugar and balance of water to mixture. Strain mixture. Add additional lemon juice to taste. Pour in bowl and refrigerate until set. Serve topped with Grandma's custard (see below).
