A nice option away from french fries
Preheat oven to 425. Select a pan large enough to hold the potatoes so they aren't crowded. Place a potato in a large serving spoon and secure it by holding the ends. Slice the potato into 1/4 to 1/8 inch thick slices through the top and stopping when the knife reaches the spoon. Repeat with each potato. Melt the butter and brush the outside of the each potato. Place potatoes in the pan and brush again. Keep leftover butter. Bake for 30 minutes and brush the tops again allowing it to drip down into the slices. Add salt and pepper and bake for 30 more minutes.
Be careful with the hot potatoes when buttering at 30 minutes.
