Hearty meal with lots of flavor!
Rinse and soak dried beans, overnight, in a solution of baking soda, vinegar and salt (makes them easier to digest) with twice the amount of water to beans. Rinse, thoroughly, and remove any floaters.
Add all ingredients to a slow cooker crock and cook on high for eight hours.
It will thicken, slightly. If you like it really thick, try grinding a little in the food processor and adding it back or hit it with a hand blender for a few seconds.
Variation: Add two tablespoons each blackstrap molasses, brown sugar and prepared mustard and 1/4 cup of cider vinegar to give it a barbecue flavor.
