Suggest a better descriptionCut potatoes into large cubes. Place in pot of water with salt and simmer till potatoes are tender. Pour off brown foam that forms on top. Return to stove and dehydrate the potatoes by simmering till no water remains in the pot. Cut onion into thick slices. Place tomatoes and onions on a cookie sheet. Drizzle olive oil and balsamic on top. Add salt and pepper. Toss and spread out evenly. Place in oven at 375 degrees till roasted. Then, place under broil at 500 degrees till brown and tender. When done, chop finely while it's hot. Place in bowl with cooked potatoes and butter. With whisk, mix and mash and add heavy cream till desired texture is reached.
Note: Use more or less of tomatoes according to taste
