Rinse the chicken off and fold wings under to prevent burning. cut orange half into 3 sections and put inside chicken cavity. cut apple half into 3 sections and insert into chicken cavity. rubb chicken with olive oil and dress with salt and pepper and rosemary. place in somker for about 2 to 3 hours at 190 with a basin of apple juice over the fire box. I start mine breast down and turn half way through. make sure you use a meat them. at the end to ensure meat is cooked well. you can allso do on a gas or charcoal grille. have your fire on one side of your grill and place your basin with apple juice over that and cook you chicken on the other side(indirect heat). keep you heat low to med because you want 190 too 200 degrees. on the grill you can make a pouch filled with about 1 to 2 cups of hard wood chips soaked in water and with holes poked in the foil to put over your fire for the smokey flavor
