Cake:
- oven to 160C (or 140C fan)
- great lamington (18x36cm) and line with baking paper
- beat (mixer) butter, sugar and eggs until light and fluffy
- stir in flours and almond meal
- spead in pan
- bake for 55 min (golden brown)
- cool for 5 min
- flip on wire rack
- trim edges
- cut in 32 squares
Icing:
- combine milk and choc chips in a small pan and stir over low heat
- transfer to large bowl and stir in icing sugar until smooth
- place coconut in bowl
- dip cake square in icing mixture and rol in coconut
- place on wire to set
