This is a great make ahead recipe with a taco flavor.
1. Combine salsa, rotel, tomato sauce, and cumin. Set aside.
2. Brown ground turkey. Drain.
3. Brown onions and peppers.
4. Combine salsa mixture, turkey, onions and peppers, 1 can black beans and frozen corn.
5. Place cheeses and egg in a food processor. Process until smooth.
6. Cook lasagna noodles.
7. Assemble in a greased 13 X 9 inch lasagna pan: Bottom layer is turkey mixture. Top with Lasagna noodles. Next layer is cheese mixture, turkey, and mexican cheese. If using cilantro, sprinkle on top of mexican cheese. Repeat layers, ending with turkey mixture.
8. Bake in a preheated 375 degree oven for 45 minutes (covered).
9. Uncover and top with more mexican cheese. Bake 15 minutues.
10. Let stand 10 minutes before slicing.
Don't fret over exact quantities. Use as much or as little as you like.
