Chuck's spicy red pepper jelly is a spicy but sweet condiment that will knock your socks off! Makes about 2 cups.
Preparation time: 15 minutes
Cooking time: 25 minutes
Yield: 16
Pulse red bell peppers and chili peppers in a food processor until finely chopped. Transfer into a saucepan and mix with the remaining ingredients.
Bring to a boil over high heat and simmer for 25 minutes stirring occasionally until it thickens. Remove from heat.
Pour into a jar. Let cool and keep in the refrigerator. Serve with Chuck?s Rack of Lamb (see Chuck?s recipe).
