A wonderful combination of vegetables and turkey in a spicy tomato basil sauce. Spicy, Savory, Tasty!
1. Cook pasta according to boxed directions for your preferred texture, drain, set aside
2. In a large skillet, heat olive oil over medium-high heat
3. Add onion, saute for 2-3 minutes, then add garlic and cook for 2 minutes.
4. Add ground turkey, cook while breaking up into small pieces using a wooden spatula. Cook until almost all the pink color from the turkey is gone, about 5-6 minutes.
5. Using the spatula, make a small space in the center, add the bell pepper & Thai chilies (or other chilies), saute for 1 minute, then mix well, and continue to cook for 2-3 minutes
6. Add tomato sauce, diced tomatoes, basil, oregano, and black pepper, mix well, and bring to a light boil, then reduce heat to low.
7. Add carrots, green beans, green peas, and corn, stir, cover and let simmer for 15 minutes.
8. Dish out pasta into serving bowls, Spoon the Spicy Turkey & Vegetable Bolognese over the pasta, top with 3 or 4 tablespoons of shredded Peccorino Romano Cheese.
