In a skillet saute onion and garlic in olive oil. Add spinach and saute for about 5 minutes until cooked.
Add beaten egg and continute to cook just until egg is cooked and add Romano cheese. Serve with additional Romano cheese. 6 oz. frozen spinach for 2 servings
