A lovely macaroni and cheese dish with ham for extra protein and flavor. You could use leftover ham from holiday meals or any other protein as well.
Prepare Pasta: Cook noodles according to package instructions. Reserve 1 cup of pasta water for thinning. Return noodles to pan (off heat) and add ham to warm.
Melt butter in saucepan and whisk in flour to make a roux. Whisk 3-4 minutes or until mixture no longer smells like flour and is tan in color.
Add half and half and milk. Bring to almost boil and then reduce head to low-medium.
Add cheese and stir until melted. Season with salt, pepper, dry mustard and hot sauce.
Stir in sour cream.
Incorporate cheese sauce into noodles and ham. Stir until combined. If too thick for your liking... thin with reserved pasta water.Season if needed with salt and pepper and serve!
