Suggest a better descriptionPreheat oven to 180C. Heat the oil in a non-stick saucepan and add onion, garlic and thyme. Stir and cook until soft.
Add the mince and cook well.
Remove from heat and add the cooked rice, zucchini, lentils and pine nuts.
Season with salt and pepper.
Cut a thin slice off the top of the tomatoes, keeping the tops. Hollow out the tomatoes using a teaspoon. Fill the tomatoes with the beef and rice mixture and press down firmly. Replace the tops and bake for 20 minutes.
Serve with a side of any remaining beef and rice mixture.
