Peel carrots and sweet potato and chop into rectangles, thickness by preference
Place in a bowl and drizzle the olive oil over the top and toss with hands
sprinkle Italian herbs, salt, rosemary and any other preferred toppings
place on oven tray and make sure they're separated
bake for 20 minutes on 200c
