Very tasty side dish, with strong flavors. Adapted from a Better Homes and Gardens recipe.
1. Sweet Potatoes
Preheat oven to 375°F. Combine sweet potatoes, onions, salt, pepper and olive oil and toss to coat. Spread mixture in single layer in oven tray. Bake 30 minutes, stirring once till vegetables are tender.
2. Pecan Crumble
Melt butter in a small skillet over medium heat. Stir in pecan pieces, brown sugar, and salt. Cook and stir for 2-3 minutes or until pecans are coated in the brown sugar mix (use care not to burn the sugar). Remove from heat and spread on foil to cool completely. Foil can be used as a tray to place crumbles in freezer to speed the cooling process.
3. Dressing
Whisk vinegar, honey,garlic, salt and pepper together in small bowl. Add olive oil and then half of blue cheese.
4. Serve
Transfer potatoes and onions to serving plate arranged in a fan shape along edge of plate. Sprinkle with pecan crumble and top with dressing. Top with remaining blue cheese crumbles.
