Sweet Tea is the champagne of the south, but this sweet tea will give you a much bigger kick in the butt.
For the Syrup Base:
Bring the honey, mint, and water to a boil in a medium pot over medium heat, stirring often. Remove from heat, add the tea leaves, cover and let steep 30 minutes. The better the quality tea used in this step results in a better quality finished product. Splurge on the tea. Add more tea if you like a stonger tea flavor in the end product. Strain the syrup base into a storage container and chill until service (I like a mason jar with a lid).
For the Drink:
In a martini shaker with a scoop of ice pour in the vodka, syrup base, and squeezed lime wedge. Shake well, and dispense into a 12 ounce glass. Add soda water, stir, and top with ice. Garnish with fresh mint.
Be careful, these will sneak up on you; but you won't know it until the following day. Enjoy!
