1.PREPARE COLE SLAW Toss cole slaw mix, dressing, and rub in; set aside.
2. COOK RAJAS Shred chicken. Heat oil in skillet over med-high heat(1-3 minutes). Thinly slice onion and peppers. Place onion, peppers, and rub in skillet; cook 4-5 minutes or until peppers are tender, stirring occasionally. Add chicken; cook 2 minutes or until chicken is heated through. Add barbecue sauce; cook 1 minute or until heated through.
3. PREPARE CORN CAKES AND SERVE heat griddle over medium-low heat 3-5 minutes. Combine corn muffin mix and chipotle rub/spice. Add 3/4 cup milk, 1 egg, & 2 tbsps melted butter, mix according to package directions. Scoop batter onto griddle, cook 1.5 to 2 minutes or until golden brown, turning once. Remove cakes, set aside, remove griddle, let cool for one minute and prepare remaining batter if needed.
Serve Rajas and cole slaw over corn cakes.
