whisk together dry ingredients. Whisk together wet and 1/4 cup of butter. Combine wet and dry along with corn.
For filling
Heat cast over medium heat. Add beef, cumin, chili, salt and pepper. Cook until browned; remove from pan with sloted spoon. To same pan add onion, galic and jalapeno. Cook stirring until onion is softened. Stir in beef and remaining ingredients. Remove from heat and sprinkle with cheese. Spread cornbread mixtre over top evenly leaving 1/2 inch gap at edges. Bake 15 min in preheated 400F oven. Brush with remaining 2 T. butter. Return to oven and bake until to is brown and tester comes out clean, about 15 minutes. Serve garnished with sour cream and cilantro.
