Classic Tater Tot Casserole with a breakfast twist.
Preheat oven to 350 degrees.
Brown breakfast sausage. Drain grease. Set aside.
Cook bacon. I like my bacon less crispy in the casserole, so I bake mine in the oven at 450 degrees for about 12 minutes beforehand in a broiler pan on the center rack.
Chop cooked bacon into small pieces and set aside.
Scramble eggs in frying pan with a small portion of leftover meat drippings.
In large mixing bowl, combine frozen tater tots, 2 cans of sausage gravy, bacon, sausage, and eggs. Mix until well blended with a spoon.
Lightly grease 13x9 pan, pour ingredients in, and push the ingredients out to fill the pan.
If you like your cheese cooked well (I do), add the shredded cheese to the top of the casserole ingredients. You can also add this about 15 minutes before the end of cooking for a lighter melted cheese.
Allow to cook for 35 to 40 minutes, or until gravy is bubbly, and cheese is well melted.
Cool for 5 to 10 minutes before serving. Casserole will be piping hot.
If you're more of a gravy fan, add 3 cans of Breakfast Gravy to the casserole mixture.
