This is a staple in our kitchen. It allows you to have fresh onions and garlic at hand pre-prepared at the tip of your fingers all the time in an instant. You can use it in virtually anything that calls for onions. Adjust to your taste for the garlic and salt -- though the salt content does prevent it from freezing in the freezer, so adjusting to no salt is not recommended as it would be much more challenging to use.
The simple act of sauteing this in a pan with some butter prior to adding your next ingredient for any recipe makes the whole house smell delicious.
Mix all the ingredients together in a large bowl. Working in batches, add the vegetables to a food processor and process until smooth. Transfer the batches to a large bowl and combine until the entire mixture is smooth. Transfer to lidded glass jars (or plastic containers) and store in the refrigerator (or freezer) for 6-8 months.
