Suggest a better descriptionBeef: Place roast on baking sheet and pat the outside dry with a paper towel. Spread the butter on with your hands. Sprinkle evenly with salt and pepper. Roast at 500 degrees for 25 minutes, medium/rare. Remove and cover tightly with foil and let rest for 20 minutes.
Sauce: Bring heavy cream to a full boil in a medium saucepan over medium high heat. Continue boiling for 45 minutes. Remove from heat and add Gorgonzola cheese, Parmesan cheese, salt and pepper, and parsley. Whisk rapidly until cheese is melted. Serve over beef.
