Trim noticable fat from chicken
Place in slow-cooker with diced onion, can of beer, salt, pepper, cilantro, garlic
Stir to combine, cover, cook on high for 3ish hours, or low for 5ish hours
To Shred:
Chicken can be hot or room temp (not cold)
Use KitchenAid mixer, or old-school hand mixer. If you have none of those then I don't have a cool, time-saver for you; sadly you'll just have to shred by hand
Begin cooking rice
Dice veggies and stir-fry over med-high heat for 5-10 minutes, depending on "doneness" preference
Add cooked, shredded chicken to veggies, mix well
Add two 3-second squirts of honey, (which is approximately 2 servings or 1/4 cup) then add 1/4 cup soy sauce. Add generous squirt of lemongrass paste and lime juice.
Add spices, stir to combine, adjust spices as desired
Serve each portion over 1 cup cooked rice
When made with 1.5 cups raw rice this makes 4 servings of 350 calories and 35 grams of protein
