To make strawberry oat bran muffins, substitute the Fig Balsamic Jam with Strawberry Balsamic Jam and add 1/2 cup of fresh, pureed strawberries, and substitute 2 Tablespoons of Blood Orange EVOO with 2 Tablespoons of Mazola oil.
Mix wet and dry ingredients separately. Pour the wet ingredients into the dry ingredients and mix until moistened. Let the mixture rise while waiting for the oven to preheat.
Preheat the oven to 425 degrees. Spoon a small amount of batter, then a dollop of Fig Balsamic Jam and then batter to cover, repeat for each mini muffin. Bake for 12 minutes. Cool and eat!
Muffins can be frozen and taken out and defrosted at room temperature or in microwave.
