Suggest a better descriptionPreheat oven to 350 F. Grease 9x13 baking dish. Tear 6 tortillas into small pieces and spread over bottom of pan. Sprinkle with half the cheese, covering all surfaces. Tear the other 6 tortillas and top the cheese layer. Sprinkle the remaining cheese. Sprinkle spinach over cheese. Whisk eggs and add buttermilk and salt ( if using) and beat again. Pour over casserole. Sprinkle lightly with paprika. Bake 40 minutes until lightly browned and eggs are set. Serve with favorite toppings.
