Dense, non-sweet pancakes, high in protein and complex carbohydrates, great to make a big batch and reheat for a quick breakfast when on the run. My father, who lived in Germany, used to make this for us as little kids. It's still a favorite!
Add all dry ingredients together in a large bowl and make sure everything is well mixed.
In a separate bowl, wisk together eggs or egg beaters and flavorings, along with 1 cup of milk. Make sure it's all blended together well.
Slowly add the egg mixture to the dry mixture. This takes some good old fashioned elbow grease, as you don't want to mix this with an electric mixer because it makes the pancakes too dense.
You can add milk until you get to the consistency of cake batter. If it's lumpy, it's okay.
Heat a large skillet to medium heat, and coat with just a bit of olive oil or Pam spray, whichever you choose.
I like to use a 1 cup measuring-cup to ladle the batter onto the skillet for size consistency. The pancakes are a little dense, so you can go smaller if you'd like. Turn pancake over once the small bubbles have mostly popped, and the pancake starts to look only shiny on the center part. Once flipped, it only takes about 30-40 seconds on the other side before the pancake is done.
Repeat until batter is gone, and serve with whatever toppings you choose. We like to use jams or jellies, and butter, or syrup. These pancakes are healthy and very filling, high in protein and complex carbohydrates. They may be a bit of an acquired taste, because they're definitely different than regular pancakes, but traditional German food isn't very sweet- even the desserts sometimes. Everything is in the directions, but one can add more vanilla, sugar, or even fresh berries, if desired. I sometimes like to add in a bit of Grand Mariner liquor for a bit more flavor. Great when served with turkey bacon, and maybe some light vanilla yogurt. :)
