Need to start day before
The day before, prepare the marinade. Mash the garlic and 2 teaspoons salt to a paste in a mortar. Pound in the cumin, oregano, pepper, cilantro, and then the juices. Or puree in a blender.
Remove the giblets and any lumps of fat from the front and main cavities of the turkey. Season inside with slat and pepper. Loosen the turkey skin from the meat. Start by worming your fingers into the neck cavity between the skin and the breast meat. Slide hand down to loosen skin on thighs and drumsticks.
Add 1/4 cup of the marinade to the main cavity and 1 tablespoon to the front cavity. Stand the turkey upright in a deep bowl and pour most of the remaining adobo under the skin. Work over a roasting pan to catch any runoff. Transfer the turkey to a plastic bag with marinade. Marinate over night in the refrigerator, turning it several times.
Place rack in lower third of the oven and preheat oven to 350 degrees.
Remove turkey and drain. Arrange breast side up on a rack in a roasting pan. Drizzle melted butter over the breast and spread it over the skin with your fingers. Roast bird until thoroughly cooked, 2.5 to 3 hours. (Thigh read 180 when done). Baste every 30 minutes. Tent with foil if brown s too quickly.
Let rest for 10 minutes on cutting board. Carve, serve garnished with fruit and with mojo on the side.
