Whether prepared from the start or from holiday left-overs, it's a hit!
Preheat oven to 375 F. Spray a 9 x 12 inch baking dish with non-stick cooking spray.
Prepare bag/box of stuffing per instructions. (or have leftover stuffing ready)
Spoon enough prepared stuffing to cover the bottom of the baking dish, then top with turkey.
Combine 1/2 cup mayonnaise with cranberry sauce; spread evenly over the turkey.
In a large bowl, combine the remaining 3/4 cup mayonnaise, potatoes and cheese. Spread evenly over the turkey.
Top with the remaining stuffing.
Bake for 45 minutes or until heated through.
Let stand for 10 minutes before serving.
Unless your left-over stuffing is fairly dry and will yield enough, I would use a 16oz bag of herb stuffing.
