Suggest a better descriptionSprinkle the chicken with 1 teaspoon salt on each side.
Combine oil, zest, juice, garlic, rosemary, and 1 teaspoon pepper in a glass dish just large enough to hold the flattened chicken. Cover with plastic wrap and refrigerate for at least 4 hours or overnight, turning once or twice.
When ready to grill, prep a hot charcoal fire on one side of the grill. spread 1/4 coals on the other side. (turn on gas grill to low heat.) Place chicken on cooler side of grill with skin side up, weight it down with the dish you marinated in. Cook 12- 15 minutes until underside in golden brown. Turn the chicken, weight down again and cook for another 12 -15 minutes until golden brown and chicken is cooked through. Place the leon halves on the cool side of the grill cut side down, for the last 10 minutes of cooking. Remove chicken to a plate or cutting board. cover with aluminum foil and allow to rest for 5 minutes. cut the chicken into quarters, sprinkle with salt and serve with grilled lemon halves.
Have butcher flatten chicken!!
