HOME FRIES:
1. Melt the butter in a large nonstick skillet over medium heat. Dump in the potatoes, turkey, and apple. Sprinkle with the seasoning mix. Stir to mix, then let cook for 5 minutes. Turn the mixture over with a spatula. Continue cooking for about 20 minutes, turning every few minutes to brown the potatoes on all sides.
FRIED EGG:
1. Coat a nonstick skillet with cooking spray, then lightly wipe away the excess spray with a paper towel. Heat the skillet over medium heat.
2. Add the eggs. Cover and cook for 3 to 4 minutes, or until the yolks turn pink and the whites are just firm. 3. Slide the eggs onto home fries.
