Made with a whole vanilla bean. This pudding is a very fast and easy to make dessert.
1. In a saucepan, add the sugar, cornstarch, and a pinch of salt and mix together.
2. Whisk the 2 percent Milk into the saucepan.
3. Cut the vanilla bean in half lengthwise, scrape the seeds out of each half and whisk the seeds and pod into the saucepan.
4. Put the saucepan over medium heat until almost simmering(quite hot but not boiling); stirring often.
5. In a separate bowl, whisk the egg yolks and heavy cream.
6. Temper the egg mixture by gradually whisking in a good cup of the hot vanilla milk mixture to the egg mixture.
7. Whisk the now hot egg mixture into the saucepan, bring this to a boil for 2 minutes while constantly whisking.
8. Remove from heat. Remove the vanilla bean pods and whisk in the butter.
9. Pour into bowl(s) and let the mixture cool for 20 minutes while stirring often.
10. If you don''t want pudding skin to form on top press a piece of plastice wrap on top of the pudding so air can''t affect it.
11. Chill and serve. Garnish with grated coconut or chocolate if you want.
